How does a Christian know?

It's not called discipline; rather, it's called indoctrination. I've been there; until I picked up a Bible, read it and believed it.
I'm sorry that you had a bad experience but that experience isn't the sum total of Catholicism. There are others who pick up the bible and accuse it of indoctrinating people as well. But there is a definite authoritative Church in Scripture that teaches, corrects, holds to account, assists in virtue building and confecting sacraments (baptism/Eucharist) etc. That you must concede.

See what I mean; I will not concede to RCC's indoctrination.

No, I am looking for the truth. Yes, God's word is the truth. But interpretations of God's word is not necessarily the truth.
Are you getting wobbly on us now? We have the truth of Jesus Christ in the Holy Eucharist, the source and summit of the Christian faith.
